Requirements
  • A minimum of 3+ years of sous chef experience and 5+ years of kitchen experience is required.
  • Extensive knowledge of culinary fundamentals, including knife skills, butchery, sauces, and all kitchen stations, is required.
  • Extensive knowledge of the food industry, restaurants, and competitive markets is required.
  • Developed verbal and written communication skills are required.
  • Ability to maintain compliance with all local, state, and federal laws and regulations is required.
  • Ability to supervise, train, and motivate multiple levels of employees and assess and evaluate employee performance fairly and consistently is required.
  • Basic knowledge of revenue management and participation in developing short- and long-term financial and operational goals for restaurants are required.
  • Ability to stand and exert well-paced mobility for up to eight hours is required.
  • Ability to work at a steady pace while multitasking in a limited kitchen space is required.
  • Ability to work around heat, steam, refrigeration, and cleaning chemicals is required.
  • Ability to continuously use knives and kitchen equipment is required.
  • Ability to regularly lift 30–50 pounds is required.
  • Ability to occasionally push or pull carts or equipment weighing up to 250 pounds is required.
  • Ability to perform repetitive motions, including grasping, writing, standing, sitting, walking, and bending, and to meet hearing and visual acuity requirements is required.
  • Slip-resistant footwear is required.
Responsibilities
  • Work with the Head Chef to create innovative and authentic menus.
  • Educate the team about regional history, culture, cuisine, industry trends, innovative techniques, and environmentally friendly products and procedures.
  • Develop, coach, and consistently execute culinary standards.
  • Ensure consistent menu execution using line checks, menu-change standard operating procedures, and recipes.
  • Work on the line during peak times, press events, and festival periods.
  • Educate and coach the team to exceed expectations.
  • Develop a team of leaders prepared and qualified to advance in the organization.
  • Define expectations, hold individuals accountable, provide feedback, and delegate work appropriately.
  • Recruit and hire talent.
  • Execute training programs for hourly and management employees.
  • Communicate José Andrés Group’s vision to team members, guests, students, vendors, and the community.
  • Lead by example and demonstrate ownership, accountability, and initiative.
  • Create a positive work environment and address operational issues proactively.
  • Manage daily restaurant operations, policies, procedures, and concept standards.
  • Communicate facility or operational emergencies to leadership.
  • Maintain a daily log to communicate between shifts and prevent recurring issues.
  • Conduct service-team meetings twice daily and chef meetings weekly.
  • Maintain a safe, clean, organized, and sanitary work environment.
  • Teach and enforce food sanitation and safety standards.
  • Ensure compliance with health standards and federal and state laws.
  • Correct violations promptly.
  • Work with Home Office finance, marketing, and events teams to maintain standards.
  • Develop and execute plans to stay within department budgets and maximize profits.
  • Manage inventory, waste, pricing, cashier labor, kitchen labor, janitor labor, scheduling, and payroll.
  • Ensure Compeat is used correctly and financial data is accurate.
Desired Qualifications
  • QSR experience is highly desired.
  • A culinary degree is preferred.
