Requirements
  • Graduation from a hotel-management school.
  • International experience.
  • Strong business knowledge and financial acumen, with a very good understanding of operational functions in luxury hospitality.
  • A minimum of 5 to 7 years of operational restaurant-management experience in luxury hospitality.
Responsibilities
  • Articulate and promote the hotel's food and beverage strategy.
  • Manage relationships with culinary partners, including Matsuhisa and Il Carpaccio.
  • Assist the Hotel Manager in delivering regular results that contribute to the hotel's success.
  • Lead necessary operational meetings.
  • Maintain and develop Raffles service standards and culture.
  • Supervise all operational activities to achieve hotel objectives for gross operating profit, guest satisfaction, brand consistency, and employee satisfaction.
  • Lead periodic action plans covering budgets, forecasts, and performance reporting.
  • Ensure that outlet budgets and forecasts are met or exceeded while optimizing average prices and checks and controlling costs without compromising quality or profitability.
  • Coordinate the development and deployment of Raffles practices, operating procedures, training programs, manuals, directives, menus, work schedules, and regulations for the teams.
  • Analyze and verify daily reports concerning irregularities.
  • Conduct regular, sometimes daily, audits of standards within the F&B division.
  • Maintain current records of grooming-rule compliance, work schedules, vacations, labor costs, salaries, absenteeism, and disciplinary actions.
  • Manage recruitment and/or dismissal of F&B teams and ensure that employees are trained on basic rules.
  • Coordinate the selection, purchasing, storage, inventory, and use of all equipment related to F&B operations.
  • Ensure that FLHS rules and HACCP procedures are applied.
  • Manage guest complaints for the F&B department.
  • Maintain consistent pricing policies with suppliers based on quality, service, total cost, inventory, and sales forecasts.
  • Work closely with local, national, and governmental authorities to maintain strict hygiene, sanitation, and cleanliness standards within the F&B department.
  • Develop new promotions to increase guest satisfaction while respecting Raffles standards.
  • Maintain effective communication among all departments.
  • Conduct daily F&B briefings covering VIP hotel arrivals, revenue, standards, and ongoing operational issues.
  • Maintain positive relationships with all hotel departments to promote a harmonious, cooperative environment and maximize efficiency and productivity.
  • Maintain an up-to-date database of guest preferences.
  • Coordinate with public relations on a communication plan about menu updates in collaboration with the Executive Chef.
  • Ensure the performance development of each employee.
  • Respond to hotel emergency or evacuation situations.
