Requirements
  • At least 8 years of experience in food and beverage product development, including at least 3 years leading an innovation, research and development, or new product development function.
  • Personal experience taking powdered beverages, functional foods, or supplements from bench to shelf, including solubility, stability, and sensory work.

Responsibilities
  • Own the innovation roadmap, including deciding what to build, sequencing initiatives, placing bets using subscription data, consumer research, and retail velocity, and ending weak concepts early.
  • Lead research and development and formulation, including benchtop work, sensory evaluation, stability, shelf-life, and nutritionals.
  • Own efficacy and claims substantiation for functional ingredients.
  • Drive commercialization through the stage-gate process from concept to first production run.
  • Manage co-manufacturers, ingredient suppliers, and laboratories while meeting cost of goods sold targets, minimum order quantities, and launch dates across direct-to-consumer and retail channels.
  • Resolve scale-up issues between pilot production and bench formulation.
  • Ensure compliance with Food and Drug Administration and Federal Trade Commission requirements, labeling rules, structure/function claims, and current good manufacturing practices in partnership with quality and legal teams.
  • Own margin architecture, launch forecasts, and pipeline value, and develop business cases for launches with finance.
  • Lead new product development program management and grow the innovation team.
  • Create and secure approval for a prioritized 24-month innovation roadmap with business cases.
  • Audit the active pipeline so every project has an owner, gate, date, and margin target, and eliminate at least one weak concept.
  • Map co-manufacturer and supplier relationships, identify major scale-up or cost of goods sold risks, and create mitigation plans.
  • Accelerate or de-risk a product launch.
  • Build or scale the innovation function.
Desired Qualifications
  • Experience formulating functional mushrooms, adaptogens, or nootropics.
  • Experience launching products into direct-to-consumer subscription and major retail channels, especially club and mass retail.
  • A degree in food science, chemistry, or nutrition.
