Responsibilities
Manage all day-to-day catering services.
Develop contracts and oversee the administrative and operational aspects of preparing and selling events and catered parties.
Coordinate with banquet and other departments to ensure that guest expectations are exceeded and high-quality food and service are delivered.
Help clients arrange banquets, luncheons, meetings, weddings, dances, and other social events, and obtain the information needed for guest planning.
Work with the Executive Chef to determine selling prices, menus, and other details for catered events.
Oversee the development of contracts and ensure that pre-planned banquet menu offerings are current and reflect clients' interests.
Transmit necessary information and coordinate event planning with production and serving staff.
Arrange for menu printing, decorations, entertainment, and other special requests.
Inspect completed arrangements and, when needed, oversee the greeting and serving of guests.
Perform hands-on service work when needed and orchestrate events as necessary.
Maintain past and potential client files and schedule calls or visits to assess prospective clients' ongoing catering needs.
Assist with completing in-house banquet event orders.
Attend staff and management meetings to review policies and procedures, future business, and the quality and image of banquet functions.
Assume manager-on-duty responsibility when necessary.
Diagram room layouts, banquet item placement, and related function details.
Meet with department managers to plan food and beverage aspects of staff-organized special events.
Manage banquet billing and arrange prompt payment for events.
Update weekly function information for all affected staff.
Serve as liaison among kitchen, service, and management staff.
Perform special projects assigned by the Director of Catering.
