Responsibilities
  • Work all kitchen positions, including pantry and banquet positions, independently as business demands require.
  • Assist other team members with mentorship, training development, daily preparation, and technique guidance.
  • Assist the chef with specialty dinners and functions with minimal supervision.
  • Develop daily features and special menus with the chef's guidance and approval while following the outlet's cuisine theme.
  • Assist with food requisitions and ordering needs under the chef's guidance and approval for cost-of-goods budgeting.
  • Lead and manage kitchen service in the absence of the chef.
  • Lead an assigned kitchen station during service from preparation through final plating.
  • Prepare, cook, and plate menu items according to recipes, portion standards, and presentation guidelines.
  • Manage multiple orders during peak service while maintaining accuracy, timing, and consistency.
  • Monitor ticket flow and prioritize execution based on service demand and kitchen direction.
  • Ensure dishes are finished, garnished, and meet quality standards before leaving the kitchen.
  • Perform final checks for temperature, portion accuracy, seasoning, and presentation.
  • Communicate with the expeditor and sous chef about timing, modifications, and service flow.

Building on this historic legacy and as part of Reuben Brothers' visionary £1 billion regeneration of 1.3 prime acres of the Piccadilly Estate, the house has been meticulously restored and thoughtfully reinvented, reflecting Reuben Brothers commitment to preserving its character, craftsmanship and heritage. The imaginative revival of this historic property at 94 Piccadilly - the former 'In & Out' Naval and Military Club - aims to capture the true spirit of London to provide a captivating new Mayfair destination for Londoners and international visitors alike. Poised between the serenity of Green Park and vibrant Shepherd Market, the 102-room hotel and residences will be both retreat and social hub. Classically English yet drawing on the eclectic influences that define Great Britain today, it will appeal as much by day as by night. Their debut hotel in the UK, two leading designers will bring the property's intriguing duality to life: Jean-Louis Deniot overseeing the transformation of the hotel and its guest spaces, and Laura Gonzalez designing the signature bar, industry-leading wellbeing facilities and a members club, which is due to open later in 2027. Encompassing several historic properties, the Georgian mansion at the heart of the hotel is a London icon - a gracious, Grade I-listed, Palladian-style home commissioned by the 2nd Earl of Egremont in 1756, and home to the most illustrious families of the Georgian era, including its namesake, The Duke of Cambridge. As a new social centre, the hotel will feature event spaces suited to every occasion. Hotel Jerome Appoints Zak Gregoire as Executive Chef. August 11, 2026 Hotel Jerome, Auberge Collection in Aspen has appointed Zak Gregoire as Executive Chef, with responsibility for the property's food and beverage programme. Gregoire joins the Colorado hotel following a career spanning luxury hotels, restaurants and private clubs in the US and UK, most recently serving as Executive Chef at NoMad London. Raised on Nantucket Island in Massachusetts, Gregoire developed an early interest in seasonal ingredients and open-fire cooking through fishing, camping and cooking outdoors across New England. His professional career later included positions with NoMad in New York and Los Angeles before he became Executive Chef at the historic Groton Inn in Massachusetts. Gregoire moved to the UK in 2023 and was appointed Executive Chef of NoMad London in 2024. During his time at NoMad London, he was involved in the development of the hotel's food and beverage offer, including Twenty8 NoMad, the New York-inspired restaurant launched in 2025. At Hotel Jerome, Gregoire will oversee culinary operations across Prospect, J-Bar, The Living Room, Bad Harriet, Garden Room, events and Felix Roasting Co. Prospect, the hotel's signature restaurant, is currently recommended by the Michelin Guide and focuses on seasonal dishes using ingredients connected to Colorado and the surrounding region. Miami-Dade County issued a permit on July 30, 2026, with a consideration amount of $97,002,499 covering square feet. The phased new construction approval encompasses interior work on the existing structure alongside ground-up construction of the tower and villa, supporting hotel units, condominium residences, and three restaurants, under private provider review and inspections by MTCI. This milestone builds directly on the foundation pour completed in late 2025 for the -story residential tower, keeping the overall development on track for its planned 2027 opening.
