Requirements
  • An Oregon food handlers card or equivalent is required.
  • Food Protection Manager Certification is required within six months of hire.
  • Three years of cooking experience in an institution or commercial firm serving complete meals, or an Associate’s degree in Food Service Management, Foods and Hospitality Service, or a directly related field, is required.
  • Basic knowledge of therapeutic diets is required.
  • Skill in checking trays to ensure diets have been accurately followed is required.
  • Ability to participate in menu planning, recipe development, and testing is required.
  • The employee must be able to work in an environment with equipment noise, bleach and other sanitizing agents, cleaning chemicals, smoke, steam, vapors, deep fryer exhaust, heat lamps, production equipment, variable lighting, and other active kitchen conditions.
  • Employees must review Material Safety Data Sheets for chemical handling specifics and ensure proper handling.
Responsibilities
  • Prepare food items for patients and visitors at OHSU South hospital and CHH2 according to standardized recipes, menus, or verbal instructions from higher-level cooks or supervisors.
  • Complete mise-en-place, ingredient preparation, cooking, holding, serving, chilling, reheating, and labeling and dating of products according to food safety procedures.
  • Ensure foods, including potentially hazardous foods, are handled safely according to Food and Nutrition Standard Operating Procedures, Hazard Analysis and Critical Control Points, OHSU Infection Control, and Multnomah County Health Department requirements.
  • Identify critical control points in food preparation and storage, monitor food safety hazards, and take corrective action when deviations occur.
  • Perform hand washing, cooking, cooling, holding, thawing, temperature monitoring, and cross-contamination controls.
  • Prepare sanitizing agents such as bleach water and quat sanitizer, and clean and sanitize appliances, work areas, utensils, and equipment using a dish machine or three-compartment sink.
  • Maintain cleanliness of the assigned work area, including cleaning, sanitizing, and sweeping during the last 30 minutes of each shift.
  • Maintain adequate products and supplies for patient operations and prepare for following days and upcoming events.
  • Request products and supplies for ordering and inspect supplier deliveries to verify type, quantity, quality, and temperature safety standards.
  • Create production schedules and oversee their completion in coordination with the patient services supervisor and retail café supervisor.
  • Coordinate complete orders and adjust production for last-minute orders when necessary.
  • Maintain records of prepared and leftover food amounts to adjust production schedules.
  • Coordinate and produce high-quality meals, coordinate menu assembly, and incorporate food safety procedures with other cooks or the tray line.
  • Direct other cooks and food service workers in proper preparation, service methods, and presentation.
  • Coordinate menu items for patients, guests, and staff and cover all assigned positions as needed.
  • Facilitate and coordinate work with the sous chef and executive chef.
Desired Qualifications
  • A high school diploma or equivalent, apprenticeship, American Culinary Federation certification as Certified Culinarian, or vocational studies is preferred.
  • Hotel or high-volume restaurant catering experience is preferred.
