Requirements
  • A post-secondary culinary arts training program degree is highly desirable.
  • At least one year of previous food preparation experience is required.
  • The employee must be able to perform each essential duty satisfactorily, with reasonable accommodations available for individuals with disabilities.

Responsibilities
  • Lead the kitchen and take charge of all food production.
  • Oversee product quality, cleanliness, and profitability of food service outlets to ensure smooth and efficient guest service.
  • Maintain interdepartmental communication and interact daily with guests and resort staff.
  • Lead the preparation process to ensure food and products are consistent and presented to a high standard.
  • Prepare and complete menu items to order, including plating and garnishing cooked items in a timely manner.
  • Set and properly maintain buffets.
  • Supervise all kitchen employees, including cooks and dishwashers.
  • Complete administrative duties including staff scheduling, daily and weekly payroll, food orders, inventory, costing, recipe specifications, and menu development.
  • Ensure all back-of-house staff have a current Minnesota ServSafe certificate.
  • Assist with interviewing, hiring, and training all back-of-house staff as dictated by the organizational structure.
  • Control expenses by producing only what is needed and preparing items correctly the first time.
  • Label, rotate, and store products properly, and keep coolers, storage rooms, and reach-ins organized.
  • Assign stations and tasks to staff and ensure cleanliness of back-of-house operational areas.
  • Receive and organize all back-of-house food and beverage products and check their quality, specifications, and quantities.
  • Maintain daily, weekly, and monthly cleaning schedules for kitchen areas and equipment.
  • Ensure high standards of sanitation and kitchen safety.
  • Foster positive working relationships and communication with all departments.

Kirk Schultz is retiring from the position he has held since 2019 and will stay on in an advisory role during the transition.As CEO, Anderson will provide strategic direction and lead the day-to-day financial operations of Odyssey Resorts.
