  • Ability to input and access information in the property management system, computers, and point-of-sale system.
  • Previous guest relations training.
  • Previous experience working with all products and ingredients involved.

  • Ability to transport 50 pounds and endure various physical movements throughout work areas.
  • Ability to remain stationary for 4 to 6 hours during a work shift.
  • Ability to communicate satisfactorily with guests, management, and coworkers.
  • Three to five years of experience as a Cook at a quality hotel or restaurant.
  • Food handling certificate.
  • High school diploma or equivalent vocational training certificate.
  • Certification of culinary training or apprenticeship.
Responsibilities
  • Plan, prepare, set up, and provide quality service for menu items and specials in designated outlets according to standards and plating guides.
  • Maintain organization, cleanliness, and sanitation of work areas and equipment.
  • Comply with departmental policies, service procedures, and standards.
  • Maintain knowledge of the correct maintenance and use of equipment and use equipment only as intended.
  • Anticipate guest needs, respond promptly, acknowledge guests, maintain positive guest relations, and resolve complaints.
  • Remain familiar with hotel services, features, local attractions, and activities to answer guest inquiries accurately.
  • Monitor and maintain cleanliness, sanitation, and organization of assigned work areas.
  • Follow state sanitation and health regulations and hotel requirements.
  • Meet with the Chef or Sous Chef to review assignments, anticipated business levels, changes, and other job-performance information.
  • Set up the workstation with required mise en place, tools, equipment, and supplies; inspect their cleanliness and condition; check production schedules and pars; establish daily priorities; report needed supplies; transport supplies from the storeroom; and stock designated areas.
  • Start daily preparation work and prepare and produce dessert menu items for restaurants, room service, and banquets according to recipes and yield guides.
  • Produce centerpieces for banquets and buffets and display items attractively according to requirements.
  • Prepare amenity orders for room service.
  • Report shortages to the Chef on duty before items run out.
  • Assist the Baker as required to ensure guest service.
  • Maintain proper storage procedures required by the Health Department and hotel.
  • Minimize waste and maintain controls to achieve forecasted food cost.
  • Inform the kitchen about excess items that can be used in daily specials or elsewhere.
  • Disinfect and sanitize cutting boards and worktables.
  • Transport empty and dirty pots and pans to the pot wash station.
  • Direct and assist stewards to make cleanup more efficient.
  • Break down the workstation and complete closing duties, including returning, rotating, wrapping, covering, labeling, and dating food items; organizing storage; cleaning food-preparation areas and equipment; returning utensils and equipment; cooling hot items; turning off unnecessary equipment; restocking depleted items; and reviewing follow-up actions with the Chef.
  • Assist with scheduled inventories and banquet plating.
  • Follow the maintenance program and cleaning schedule.
  • Perform duties in other kitchen areas as assigned.
