Requirements
  • A degree from an accredited culinary school or program, or an equivalent combination of education and culinary experience, is required.
  • Demonstrated understanding of culinary principles and techniques is required.
  • Three to five years of experience leading a culinary staff is required.
  • General hospitality knowledge and an interest in sustainability and sustainable food practices are required.
  • Ability to operate web-based ordering systems and process customer requests, order changes, menu updates, and client profiles is required.
  • A strong customer service orientation is required.
  • Effective communication, leadership, conflict resolution, and training skills are required.
  • Ability to adhere to budgetary guidelines is required.
  • Ability to prioritize, solve problems, and work independently is required.
  • Ability to work as an integral member of a management team is required.
  • Sensitivity to a diverse population is required.
  • Ability to work a flexible schedule that may include early mornings, evenings, and weekends is required.
  • Working knowledge of Microsoft Office, including Microsoft Word and Microsoft Excel, is required.
  • Rhode Island Food Safety Certification is required, or the employee must be willing to obtain it within one year of hire.
  • Willingness and ability to support and promote a diverse and inclusive campus community is required.
  • A records check satisfactory to Brown University is required as a condition of employment.
Responsibilities
  • Manage the daily administrative, operational, and culinary tasks, sanitation, and safety of the Residential and Retail Dining production team serving approximately 3,500 meals daily and $6 million in Catering sales.
  • Motivate, train, develop, and direct all residential culinary employees to accomplish the objectives of the operation and satisfy customers.
  • Develop menus and recipes and oversee food presentation and production for special events and Catering.
Desired Qualifications
  • Experience with menu and recipe management and/or an automated time tracking system is preferred.
  • Experience leading culinary staff in a high-volume operation and/or in a union environment is preferred.
