Requirements
  • Extensive knowledge of food and ingredients, with a high level of creativity.
  • At least 3 years of experience within a hotel or restaurant kitchen brigade.
  • Some level of culinary certifications or qualifications.
  • Ability to guide a team and work under pressure.
  • Flexible approach to work.
Responsibilities
  • Assist the Sous Chef with all aspects of the day-to-day operation of the kitchen, primarily working with the Room Service menu while remaining flexible to work across other kitchens and menus.
  • Lead a team to deliver quality food using the best ingredients, follow menu guidelines, and accommodate guest requests flexibly.
  • Supervise, train, and guide the team, including coaching and mentoring Apprentice chefs.
  • Assist with roster management and ensure the team can attend training and hotel activities.
  • Check orders, requisitions, and budgeted costs.
  • Ensure the cleanliness and maintenance of kitchen equipment, including health and safety and HACCP compliance; ensure produce mise en place is prepared for service and products are high quality.
  • Provide service in line with the Peninsula Service Principles.
Desired Qualifications
  • Experience managing a team is preferred.
