Requirements
  • The candidate must have 4–5 years of progressive Food and Beverage experience in a luxury hotel or high-volume, multi-outlet environment.
  • The candidate must have at least 2 years in a senior leadership role, with a track record of driving revenue growth, cost control, and profitability.
  • The candidate must have experience leading, coaching, and developing outlet managers and Food and Beverage teams.
  • The candidate must have strong financial and analytical capabilities, including profit-and-loss management, budgeting, and forecasting.
  • The candidate must understand menu engineering and labour/productivity management strategies.
  • The candidate must be able to collaborate effectively across multiple departments and manage stakeholders.
  • The candidate must hold a Responsible Service of Alcohol certificate and Food Handler certificate, or be willing to obtain them.
Responsibilities
  • Partner with the Director of Food and Beverage to develop and execute strategic initiatives that drive commercial success across all Food and Beverage outlets.
  • Own outlet performance accountability against revenue, cost, and profitability targets, implementing corrective actions and cost-saving opportunities to achieve financial objectives.
  • Monitor and analyse key performance indicators, including revenue, labour costs, food costs, and gross profit margins, and conduct regular outlet visits and quality audits.
  • Lead the training, coaching, and development of Outlet Managers and their teams, conduct performance reviews, and provide constructive feedback.
  • Manage profit-and-loss responsibilities for assigned outlets, including budgeting, forecasting, and variance analysis.
  • Implement menu engineering strategies to optimise profitability while maintaining brand standards and guest satisfaction.
  • Drive productivity and efficiency across the Food and Beverage team through labour scheduling, task management, and process optimisation.
  • Ensure consistent delivery of exceptional, brand-aligned guest experiences across all outlets.
  • Substitute for the Director of Food and Beverage as required, providing strategic leadership and decision-making authority.
  • Collaborate with Operations, Marketing, and Finance to align Food and Beverage initiatives with overall hotel objectives.
  • Maintain compliance with health, safety, and food handling regulations across all outlets.
Desired Qualifications
  • A tertiary qualification in Hospitality Management, Business, or a related field is preferred and advantageous.
