- Apply HACCP hygiene procedures strictly and ensure cleaning processes for pastry equipment and facilities are followed.
- Participate in monitoring refrigerated storage across all stations and throughout the pastry operation.
- Maintain appropriate organization and storage throughout the pastry area and associated spaces.
- Report physical damage or deterioration to the kitchen chef.
- Minimize waste by optimizing the use of raw products and available equipment.
- Ensure proper use of restaurant equipment and tools.
- Close the kitchen when the chef is present or absent.
- Train personnel to develop their expertise.
- Identify employees with potential for advancement.
- Retain personnel by creating a motivating, cohesive, and respectful work environment.
- Delegate responsibilities to the sous-chef, junior sous-chef, or first chef de partie during absences.
- Be able to replace all lower-level positions on the team.
- Support pastry teams in maintaining their workstations properly.
- Promote the values of Paris Society and the restaurant and represent the establishment positively internally and externally.
- Participate in checking the pastry and dining-room teams' knowledge of the menus.
- Ensure the pastry team's full service protocol is followed.
- Track each table's progress during service using the provided computer tool.
- Monitor and track customer orders.
- Anticipate customer orders and minimize waiting times.
- Work closely with the pastry chef.
- Collaborate with the kitchen chef, operations director, and teams.
- Transmit relevant information to immediate supervisors and staff under the role's responsibility.
- Know the establishment's event calendar.
- Maintain good relationships with suppliers.
