Requirements
- Must be familiar with and adhere to liquor liability laws, including prohibitions on serving alcohol to intoxicated guests or minors.
- Must know emergency procedures, including cardiopulmonary resuscitation, and work to prevent accidents.
- Ability to work as a server, bartender, host, in-room dining server, or minibar attendant to cover shifts as needed.
- Ability to lead by example and prepare and conduct disciplinary situations with Heartists.
- Ability to communicate clearly with all departments and proactively resolve issues.
- Ability to solve guest problems, recover the guest, and create a positive guest experience.
- Ability to open and close all outlets, including closing the Heartists’ banks.
Responsibilities
- Ensure proper training and supervision of personnel so they deliver prompt, courteous service in compliance with food and beverage standards and company policies and procedures.
- Take responsibility for assigned shifts and assist with overall management and department supervision.
- Supervise and coordinate assigned shifts; check staff punctuality and compliance with grooming standards.
- Complete environmental checklists for the dining room, lobby bar, in-room dining, and pool bar.
- Spot-check liquor pars, order daily supplies, and hold pre-shift meetings.
- Follow up on established training steps.
- Handle guest comments and complaints, ensure guest satisfaction, communicate with guests, and receive feedback.
- Stay on the floor during peak hours, observe and teach staff service, correct service issues, and monitor guest experiences.
- Examine food preparation and beverage presentation.
- Assist with in-room dining, minibar, and other food and beverage front-of-house positions when business requires.
- Check outlet setup and cleanliness.
- Review amenities and door-knob orders and provide the information to the culinary team.
- Check liquor-room cleanliness and ensure first-in, first-out procedures have been followed.
- Receive juice, dairy, liquor, and wine orders; ensure they are organized in the liquor room and handled according to first-in, first-out procedures.
- Inspect public areas, including the Uva patio, pool deck, and restrooms; ensure guests are cared for, check cleanliness, and address issues.
- Ensure the minibar attendant completes the charges report and submits it to the front desk by 1 p.m.
- Complete the food and beverage report.
- Communicate out-of-stock items to the culinary team and inform the front-of-house team.
- Maintain the condition of food and beverage outlets and complete administrative responsibilities.
- Assist the manager with scheduling, forecasting, inventories, and payroll completion.
- Participate in interviewing candidates for open food and beverage department positions.
- Prepare maintenance requests and follow up on them.
- Control costs; monitor food and liquor requisitions and replenish outlets.
- Monitor food waste, labor costs, and payroll costs.
- Check bar controls, shot-glass use, red lining, and fully emptied bottles.
- Perform other duties assigned by management.
