Requirements
  • At least two years of experience in food and beverage or rooms revenue management.

Responsibilities
  • Monitor key performance indicators across food and beverage outlets, establish benchmarks, develop revenue-maximizing strategies, and evaluate outcomes.
  • Evaluate group and catering business to maximize food and beverage revenue and profitability.
  • Develop and execute food and beverage pricing strategies and menu engineering by analyzing demand factors, sales mix, profit margins, and guest preferences.
  • Champion the Restaurant Revenue Management program within the hotel and promote a culture of total revenue management.
  • Identify opportunities to optimize seat occupancy and meal duration while maintaining the positioning of the hotel and venues.
  • Develop and execute strategies to maximize function-space utilization and its contribution to total hotel revenue.
  • Manage outlet reservation-system configurations, including flow controls, turn times, and booking policies, to maximize table and seat occupancy.
  • Monitor industry trends and developments, support special projects, and identify new food and beverage revenue opportunities.
  • Prepare competitive analyses, reports, and presentation materials for weekly Revenue and Food & Beverage meetings and other stakeholders.
  • Generate and maintain accurate food and beverage revenue-management reports and serve as the primary analytical resource across food and beverage and affiliated departments.
  • Explore and enhance automation efforts in reporting and analytical tools.
  • Collaborate with food and beverage leadership to drive accurate forecasting and long-term financial projections within acceptable variances.
  • Prepare materials for weekly Revenue and Food & Beverage strategy meetings.
  • Complete required reporting, including month-end commentary, strategic budget planning, marketing plans, and performance tracking and analysis of food and beverage revenue streams.
  • Collaborate on training and incentive programs intended to increase average check and colleague engagement while maintaining guest satisfaction.
  • Perform ad hoc tasks, analysis, and reporting for senior leadership.
  • Collaborate with Marketing to update the commercial planning calendar and measure key performance indicators for initiatives.
  • Manage table availability and inventory across channels and communicate strategies and restrictions to operations teams.
  • Act as the food and beverage systems expert for Avero, revenue-management, point-of-sale, and reporting platforms, including system maintenance, inventory loading, restriction management, demand forecasting, and daily system checks.
  • Maintain relationships with GRC to keep the call center updated with accurate hotel food and beverage information.
  • Cultivate and manage relationships with hotel clients to support the hotel brand's positioning and image.
  • Perform other duties as assigned.
Desired Qualifications
  • Experience in four- or five-star hotels, award-winning restaurants, multiple outlets, banquets and catering, or similar markets.
  • Experience with Avero, OpenTable, Ideas G3, Opera PMS, and Opera Cloud OSEM.
  • Leadership experience in food and beverage management.
  • Understanding of food and beverage management and hotel operations.
  • Knowledge of current food and beverage trends.
  • A proven track record of maximizing food and beverage revenue.
