Requirements
  • Three to six years of high-volume restaurant experience.
  • One to two years of management experience.
  • ServSafe certification.

Responsibilities
  • The Kitchen Manager is directly responsible for all kitchen functions, including food purchasing, inventory management, preparation, food safety, maintenance of quality standards, sanitation and cleanliness, and training employees in cooking, preparation, plate presentation, portion control, and cost control.
  • Hire, onboard, orient, train, supervise, complete daily missed punches and annual reviews, approve payroll, and motivate team members.
  • Manage employee-relations issues, including corrective action measures where necessary.
  • Train team members on expectations for kitchen conduct and service.
  • Ensure the kitchen operates according to company expectations for operational processes and procedures.
  • Check and maintain proper food holding and refrigeration temperature control points.
  • Direct the safety program for accident prevention and manage employee injury and illness reporting.
  • Provide safety training in first aid, lifting, carrying, hazardous-material handling, and equipment use.
  • Coordinate maintenance issues with the General Manager and arrange preventive maintenance or repairs for restaurant equipment and the kitchen.
  • Monitor and implement janitorial and sanitation standards, including cleaning the entire kitchen and maintaining cleaning schedules for floors, mats, walls, hoods, ceilings, equipment, and food storage areas.
  • Oversee kitchen team members' handling and preparation of food and proper ordering, rotation, and defrosting procedures.
  • Monitor food preparation and ensure food freshness and quality.
  • Ensure kitchen team members have the tools necessary to perform their jobs.
  • Conduct regular departmental meetings.
  • Ensure daily sidework is completed by staff and verified by management before the end of the shift.
  • Report for work in a timely manner when scheduled.
  • Conduct monthly food inventory and use inventory-software reporting to correct variance issues and report them to the General Manager.
  • Implement strategies to exceed budgetary expectations for operational costs.
  • Manage salary and wage administration to meet budgeted labor requirements based on anticipated business activity.
  • Ensure positions are staffed as needed and manage labor costs while meeting food, beverage, and labor objectives.
  • Assist with other assigned duties.
