Junior Sous Chef – Bakery
About the job
- Have a diploma or bachelor's degree in hospitality management, baking and pastry arts, culinary arts, or a related field.
- Have at least 4–6 years of bakery experience in reputable hotels, resorts, or professional bakery/pastry operations.
- Have strong knowledge and experience in bread making, fermentation, laminated dough techniques, and production techniques for cakes, pastries, and other baked goods.
- Be able to communicate in Turkish; only Turkish-speaking candidates will be hired.
- Support the Bakery Sous Chef in managing daily bakery production and operations.
- Supervise and guide Commis Chefs and bakery team members during preparation and service.
- Produce and oversee the production of breads, rolls, croissants, cakes, cookies, muffins, and other baked goods.
- Ensure consistent quality, flavor, texture, freshness, and presentation standards across bakery products.
- Contribute to developing new bakery products, recipes, and seasonal items.
- Prepare daily production plans and allocate tasks among team members.
- Ensure products are prepared on time for restaurants, buffets, banquets, room service, and special events.
- Track ingredient usage, food costs, waste, and stock levels.
- Ensure ingredients used in bakery production are stored and labeled correctly and stock rotation is followed.
- Ensure full compliance with HACCP, food safety, hygiene, and sanitation standards.
- Perform quality checks on prepared products and ensure compliance with standard recipes.
- Train junior bakery team members in production techniques and procedures and support their development.
- Ensure bakery equipment and work areas are clean, organized, and properly maintained.
- Coordinate with Pastry, Culinary, and Food and Beverage teams according to special requests and operational needs.
- Support the preparation and regular maintenance of production records and operational reports.
- Previous experience as a Chef de Partie – Bakery or in a similar team-management or supervisory position in the luxury hotel sector is preferred.
