  • Working knowledge of point-of-sale systems, cash collection, bookkeeping procedures, labor laws, union contract language, liquor laws, purchasing requirements, and customer and product forecasting.
  • Excellent customer service, guest relations, communication, and interpersonal skills.
  • Ability to supervise and motivate subordinate staff, lead by example, train staff with little or no prior experience, and handle disciplinary and stressful situations effectively.
  • Ability to operate a personal computer using a variety of computer software.
  • Strong organizational skills and the ability to work productively and skillfully under pressure in a fast-paced environment.
  • Ability to establish and maintain cooperative working relationships with other employees.
  • High school diploma or equivalent.
  • Three years of food and beverage service management experience within the past four years.
  • Ability to obtain a ServSafe Manager certification.
  • Ability to obtain a TAPs card for Training for Alcohol Professionals.
  • Ability to successfully pass a background check.
  • Valid driver's license and an acceptable driving record.
Responsibilities
  • Manage and direct the Tramway's restaurant and food-and-beverage operations and services to meet profitability, professional service, efficiency, and quality objectives.
  • Supervise, train, schedule, counsel, evaluate, and discipline kitchen, wait, bar, and catering staff; develop, provide, or arrange training for new and current employees in all aspects of food-and-beverage service; and assist with payroll approval for subordinate staff.
  • Coordinate and direct catering functions, including setup, scheduling, event execution, and cleanup; ensure signed banquet bills are received and posted on the event date; and prepare and disseminate controlled-tips information according to accounting guidelines.
  • Manage the required budget specified in the annual budget and business plan; ensure the accuracy of host and cashier daily revenue reports and deposits; and assist with purchasing and inventories.
  • Ensure that the presentation of all food-and-beverage items meets established standards and communicate variations in presentation, food quality, or timeliness to the General Manager and food-and-beverage supervisors.
  • Maintain appropriate inventory of banquet supplies, including linens, props, uniforms, and equipment.
  • Perform food-and-beverage duties as necessary during subordinate absences, emergencies, and peak operating hours.
  • Operate point-of-sale systems, computers, standard kitchen and bar equipment, and standard office equipment.
Desired Qualifications
  • Five years of food-and-beverage service management experience.
  • Two years of supervisory experience.
  • Culinary training from an accredited culinary institute.
