Breakfast Chef De Partie
About the job
- A Trade qualification in Commercial Cookery (Certificate III or equivalent) is required.
- Proven experience as a Chef de Partie, or strong Demi Chef experience with readiness to step up, is required.
- Sound knowledge of breakfast buffet and à la carte service is required.
- Strong food safety and Hazard Analysis and Critical Control Points (HACCP) knowledge is required.
- Availability for early morning shifts, including weekends and public holidays, is required.
- Full working rights in Australia are required.
- Set up, run, and pack down the breakfast buffet and à la carte breakfast service to Sofitel standards.
- Prepare and cook hot and cold breakfast items to a consistently high standard.
- Maintain food safety, hygiene, and HACCP compliance throughout service.
- Manage mise en place and stock rotation for the assigned section.
- Support ordering, costing awareness, and waste minimization.
- Supervise and mentor junior kitchen team members and casual staff during breakfast shifts.
- Liaise with Front of House to ensure smooth, guest-focused service.
- Assist with events and in-room dining as required.
- Experience in a five-star hotel or high-end restaurant is highly regarded.
