Requirements
  • One year of food service or cooking experience is required.
  • A Food Handlers Permit from an approved food handler training course accredited by the Texas Department of State Health Services or the American National Standards Institute is required.
  • Sufficient proficiency in speaking, reading, and writing English is required to perform essential job functions affecting patient or employee safety and security.
  • Working knowledge of ServeSafe guidelines and health department standards is required.
  • Knowledge of kitchen food service equipment and sanitation principles is required.
  • Basic understanding of buffet receptions, upscale plated menu items, and volume batch cooking is required.
Responsibilities
  • Prepare hot and cold food according to standardized recipes, menus, safe food-handling practices, and required schedules.
  • Season, prepare, and cook meats, vegetables, soups, and sauces; measure ingredients; garnish and package food.
  • Taste food before each meal service to assess palatability and quality.
  • Review menus, verify supplies, prepare items in advance, and prepare food for retail, room service, and catering cycles.
  • Portion food according to diet requirements and recipes, and garnish food as instructed.
  • Inspect food for quality, freshness, appearance, and expiration; label, date, and rotate stored food items.
  • Report and correct improper food, cooler, and warmer temperatures, and assist with monitoring and recording temperatures.
  • Safely operate and clean equipment and maintain sanitation in the work area in compliance with applicable regulatory requirements.
  • Practice cost control through proper use and storage of food, supplies, and equipment, and minimize food waste.
  • Assist senior cooks or other responsible staff with developing new food items into menu offerings.
  • Communicate workplace hazards, menu changes, work efforts, and problems to peers and management.
  • Work with senior cooks and catering staff to ensure food is prepared on time, meets quality standards, and is transferred efficiently.
  • Assist in other food and nutrition service areas as needed.
  • Complete ongoing self-development activities and maintain the My Development Plan.
