Responsibilities
  • Ensure that mixes and grinds meet acceptable quality and yield standards and align with the production schedule.
  • Verify that ingredients and materials are correct according to product specifications.
  • Prepare batches using specified recipes, guidelines, quantities, and production schedules.
  • Maintain accurate written records and enter mixing-process documentation into the company enterprise resource planning system.
  • Perform tasks according to safety and food-safety standards.
  • Participate in safety training programs and contribute to safety initiatives.
  • Ensure compliance with regulatory requirements and company policies related to food safety, sanitation, and environmental regulations, including SQF, GMP, HACCP, OSHA, food fraud and defense, allergens, organic, and gluten-free standards.
  • Report equipment malfunctions and support an effective preventive-maintenance program.
  • Follow lockout/tagout procedures.
  • Follow the production schedule and complete efficient product changeovers.
  • Maintain clean, safe, organized, and audit-ready work areas and workstations.
  • Identify and understand batch-preparation requirements using appropriate recipes.
  • Coordinate with the machine operator to confirm the first mix has the correct dough consistency before removing it to the bowl.
  • Monitor temperature, pressure, appearance, and physical changes during process progression.
  • Keep waste within established standards.
  • Report deficiencies to the department lead or supervisor.
  • Maintain mixing records, including mix quantities, temperatures, and ingredient consumption.
  • Use the radio-frequency gun to record ingredient consumption.
  • Enter ingredient consumption and mix quantities on TGI work orders.
  • Maintain communication and coordinate lunches and breaks with the machine operator.
  • Troubleshoot and resolve problems.
  • Verify that equipment is maintained in operating condition, cleaned, and sanitized.
  • Prepare grinder equipment and change grinder stones at the indicated frequency.
  • Verify planning and scheduling.
  • Inspect corn quality before grinding, including pH and humidity.
  • Verify masa texture against recipe standards and weigh masa according to recipe standards.
  • Enter grinder information into the TGI system.
  • Change preservative tanks when they are empty.
  • Prepare corn mixes according to recipes and specifications.
  • Verify that ingredients are scanned in the TGI system and follow the first-in, first-out program.
  • Meet machinery performance standards.
  • Report deficiencies to the department supervisor after product changeovers.
  • Communicate with the machine operator about changes in masa texture, color, or smell.
  • Complete production reports, including mixes, temperatures, and lot numbers.
  • Work safely around rotating and reciprocating equipment and in cool, hot, and noisy conditions.

  • A high school diploma or General Educational Development credential is a plus.

C.H. Guenther & Son has opened a Centre of Excellence at its Coventry bakery to accelerate bakery product development across the UK and Europe. The 172-square-metre facility combines a commercial-scale bakery, customer demonstration kitchen, sensory evaluation facilities and collaboration spaces. The centre enables customers, including quick service restaurants and retailers, to work alongside CHG's experts to develop bespoke bakery innovations. It follows tens of millions of pounds of investment in UK manufacturing capabilities, including a £38 million Coventry bakery opened in 2023 that produces roughly 72,000 buns per hour. The facility supports development of premium products, free-from options and protein-rich items to meet changing consumer preferences. Its location within CHG's advanced manufacturing facility allows seamless progression from pilot-scale innovation to commercial production.

C.H. Guenther & Son, a commercial baking and food manufacturing company, has acquired Les Aliments Mejicano Inc., a flour tortilla producer with 30 years of experience. The transaction significantly expands C.H. Guenther's tortilla manufacturing and distribution capabilities across North America. Based near Montreal, Mejicano operates state-of-the-art facilities that will enhance C.H. Guenther's supply chain flexibility and capacity to serve foodservice, retail and private-label customers.
