Requirements
  • A high school diploma or equivalent is required.
  • Previous volume-feeding experience in an institutional, restaurant, or educational environment is required; school cafeteria experience is preferred.
  • Knowledge of food preparation, general cooking, food storage, cleaning procedures, and meal service is required.
  • ServSafe certification is required.
  • Knowledge of food-service point-of-sale and management systems is required.
  • Knowledge of food-service nutrition analysis applications is required.
  • Knowledge of Primero Edge is required.
  • The employee must be able to stand for extended periods, lift heavy objects regularly, perform repetitive tasks with few breaks, work in a hot environment, and take physical inventory in freezers and refrigerators at temperatures as low as 0°F.
Responsibilities
  • Coordinate ordering of foods, supplies, chemicals, produce, and direct-delivery items.
  • Ensure perpetual, daily, and monthly inventories of foods, supplies, and chemicals.
  • Keep storerooms and walk-in refrigerators in order and maintain proper supply levels.
  • Use software applications to enter and retrieve data and place grocery orders.
  • Ensure daily deposits are accurate and maintain the change fund for registers.
  • Ensure compliance with USDA regulations, nutrition standards, culinary standards, food-sanitation standards, and workplace-safety standards.
  • Coordinate required paperwork, including accident reports, negative-balance letters, employee counseling forms, daily sales and meal counts, production records, inventory records, food-safety records, and workplace-safety sheets.
  • Assist with menu coordination and analysis.
  • Assign employee daily work schedules and duty assignments.
  • Process and assimilate free- and reduced-price meal applications.
  • Ensure that kitchen and dining facilities are clean.
  • Ensure batch cooking and fresh, high-quality food production.
  • Train food-service employees with supervisor support.
  • Lead team meetings and problem-solving with staff.
  • Set up the serving line and breakfast carts each day.
  • Ensure menu items are placed on serving lines and breakfast carts in the proper order, amounts, temperatures, and on time.
  • Ensure correct serving utensils, condiments, and cutlery are provided.
  • Use serving utensils correctly to provide correct portions.
  • Implement Offer Versus Serve requirements for breakfast and lunch.
  • Serve students quickly and efficiently according to school meal schedules.
  • Coordinate preparation and serving of high-quality meals that encourage student participation in breakfast and lunch programs.
  • Provide customer service to students, parents, staff, visitors, and employees.
  • Follow local health-department food-safety requirements.
  • Monitor and record freezer, refrigerator, and milk-cooler temperatures and report temperatures above required thresholds.
  • Measure and record food temperatures to ensure proper cooking, chilling, and serving temperatures.
  • Perform general cleaning tasks and follow the cleaning schedule.
  • Follow wash, rinse, and sanitize procedures for ware washing.
  • Assist the food-service coordinator with securing food and supplies.
  • Coordinate receipt of incoming food and supply deliveries.
  • Stock incoming deliveries according to established food-storage procedures.
  • Maintain the integrity and accountability of the School Nutrition Program through compliance with federal, state, and local regulations.
  • Ensure students receive required meal components and that meals meet reimbursable-meal requirements.
  • Assist the food-service coordinator with records and reports required by local, state, and USDA regulations, including daily production records and temperature logs.
  • Implement USDA and state child-nutrition guidelines.
  • Ensure redbook documentation is accurate and current.
  • Operate and maintain commercial kitchen equipment, including convection ovens, tilt skillets, steamers, and multi-compartment sinks, safely and sanitarily.
  • Follow policies for equipment use and care and report malfunctioning equipment.
  • Communicate with supervisors, school administrators, vendors, and fellow employees.
  • Perform other duties assigned by the supervisor or administrator.
