IFF report maps GLP-1 eating moments from protein-first mornings to evening comfort.

IFF report maps GLP-1 eating moments from protein-first mornings to evening comfort. Key takeaways. * IFF's report identifies ten distinct daily eating moments for GLP-1 users, spanning protein-packed mornings to evening comfort and social meals. * The findings serve as a development roadmap for food manufacturers to create tailored, functional products with balanced nutrition and manageable portions. * Built using AI behavioral data and consumer research, the report also highlights hydation as an additional key focus area across five specific need states. International Flavors & Fragrances (IFF) has published its newest report, GLP-1 Consumer Moments of Opportunity. The overview uncovers ten emerging consumer moments that reflect the evolving needs of patients seeking nutritional support while on GLP-1 medications. GLP-1 drugs lessen appetites to reduce food intake, and IFF's research outlines that consumers are re-evaluating their food and beverage choices throughout the day. New eating occasions range from protein-focused morning routines and post-workout reward to planned indulgence, social moments, and end-of-day comfort. The report is positioned as a formulation roadmap to guide manufacturers in designing products that appeal to the rapidly growing number of GLP-1 users. "What GLP-1 users need from food and beverage products depends on the moment, and those needs can change many times throughout the day," says Yuvraj Arora, president of IFF Taste. "The most successful innovations will be designed around the occasions that matter most to consumers, delivering the right balance of nutrition, enjoyment, and functionality for each one. Understanding these moments can unlock entirely new avenues for innovation." To develop the report, IFF partnered with InsightsNow, an AI-powered market research service. The data combines proprietary consumer research with GLP-1 users, analysis of snacking behaviors, review of more than 25,000 social media posts related to GLP-1 use and snacking, and secondary industry data. The project also leveraged InsightsNow's AI-powered behavioral intelligence platform, Claira, to uncover the relationships between consumer context, internal needs, and external motivators. Evolving eating occasions. The first trend on IFF's list is "Protein-First Wake-Up," in which consumers are seeking an easy, appealing way to start the day and make progress toward their nutrition goals. This is followed by "Midday Bridge" from late morning through to early afternoon, when consumers look for satisfying nourishment between meals without feeling overly full. "Post-Dose Recovery Window" occurs when many GLP-1 users report discomfort or heightened sensory sensitivity around dosing. They may prefer mild flavors and easy-to-consume formats, IFF highlights. The data combines proprietary consumer research with GLP-1 users, analysis of snacking behaviors, review of more than 25,000 social media posts related to GLP-1 use and snacking, and secondary industry data.Meanwhile, "On-the-Go Fuel Stop" happens when busy schedules create demand for convenient, portable options with flexible portions. "End-of-Day Emotional Reset" occurs after a stressful day of work or study, when GLP-1 users often seek comfort through familiar flavors and appealing textures. A moment called "Planned Indulgence" centers on a deliberate choice to enjoy food. At this time, consumers intentionally choose small, enjoyable treats that deliver flavor and satisfaction. "Nutritional Insurance Check" takes place at the end of the day, when some consumers assess whether their intake has met their nutritional goals. After physical activities, "Post-Workout Reward" moments offer opportunities to combine a refreshing sensory experience with relevant nutrition, adds IFF. The "Social Table Moment" is when consumers want to enjoy food in a social setting, where flexible servings, shareable formats, and culturally familiar flavors can make their participation easier. The trend "Compliance Snack" is an occasion when consumers seek confidence that their snacking choices align with their nutrition and wellness objectives. Hydration on rise. The report additionally identifies "Hydration Plus," which brings the Consumer Moments approach into beverage design. According to IFF, this is a growing area of opportunity for beverage developers. Rather than viewing hydration as a single necessity, the company's research identifies five hydration need states: "Replenish, Maintain, Revitalize, Perform, and Connect" as a framework for designing beverages that better align with consumers' evolving routines and expectations. "One of the clearest findings is that nutrition isn't the only thing consumers are thinking about," says Mark Haupt, chief medical officer and VP of Health Sciences R&D for IFF Health & Biosciences. "What remains constant is the desire for foods and beverages that help them meet their health goals while still enjoying the experience."

IFF launches GutABAlite for metabolic health via GABA production at SupplySide Global 2026.

IFF launches GutABAlite for metabolic health via GABA production at SupplySide Global 2026. Key takeaways. * IFF introduces Howaru GutABAlite, the commercial name for the GABA-producing strain L. brevis LBR-6108. * A six-week IFF study links GutABAlite to gut GABA production, more short-chain fatty acids, and lower glucose exposure, with trends in insulin measures. * The company seeks to meet the metabolic health demand through a gut-first positioning. IFF has launched GutABAlite, a probiotic brand for the clinically studied strain Levilactobacillus brevis LBR-6108, for metabolic health. The flavors and health company says that the strain has been found to produce GABA in the gut and was linked to lower glucose exposure and insulin measures. "Consumers want practical ways to support healthy blood sugar, sustained energy, and digestive health as connected parts of everyday wellness," says Allyson Fish, SVP of IFF Health Sciences. "GutABAlite gives supplement and functional food brands a differentiated, gut-first solution backed by human clinical evidence." Metabolic health has become one of the main trends in nutrition. IFF says that GutABAlite gives brands a new way to tap into this demand through the gut microbiome. The ingredient joins Howaru, IFF's portfolio of clinically studied probiotic strains. The company says GutABAlite can be used in supplement and functional food applications, and will be showcasing the strain this week at SupplySide Global in the US (Oct 28-30). Insulin and glucose findings. According to IFF's referenced randomized, double-blind, placebo-controlled human study, GutABAlite has been shown to increase beneficial short-chain fatty acids while producing GABA. Researchers linked the ingredient with favorable changes in glucose and insulin measures compared with placebo. Participants taking GutABAlite for six weeks experienced lower daily glucose exposure, notes IFF. Participants also showed a trend toward around 18% lower fasting insulin and approximately 20% lower HOMA-IR (homeostatic model assessment of insulin resistance), a marker of insulin resistance, the company adds. "What is exciting is the clear line from activity in the gut to meaningful metabolic signals," says Mark Haupt, chief medical officer at IFF Health Sciences. "In just six weeks, we saw favorable changes in glucose exposure and in two important indicators of insulin function - a promising result for a gut-first approach to metabolic health." IFF notes that the effects diminished after participants stopped taking the probiotic. The company has not disclosed where the study has been published. Metabolic health in headlines. In previous discussions, Tate & Lyle highlighted that food reformulation is moving beyond sugar reduction toward broader metabolic health. It presented its Promitor soluble fiber as a multi-benefit solution for sugar replacement, fiber fortification, and blood glucose moderation. In June, Designs for Health unveiled a daily synbiotic combining live Akkermansia muciniphila and ADM's BPL1 postbiotic to naturally support GLP-1 production and metabolic health. With metabolic health's importance increasingly being recognized, global health experts renamed PCOS to PMOS to better reflect its metabolic and endocrine nature, reduce stigma, and improve diagnosis.

Lallemand broadens meat processing solutions with IFF cultures acquisition.

Lallemand broadens meat processing solutions with IFF cultures acquisition. Key takeaways. * Lallemand acquires IFF's meat cultures portfolio, adding Texel starter and surface cultures, as well as bioprotective cultures. * The deal expands its meat fermentation offering, with supply and technical support continuing during the transition. * The acquisition follows Lallemand's recent expansion in enzyme and microbial technologies through BIO-CAT and Solyve. Lallemand has acquired IFF's meat cultures portfolio, expanding its offering of starter, surface, and bioprotective cultures for meat applications. The deal brings Texel cultures into its Lallemand Specialty Cultures business unit, broadening its range of microorganism-based solutions for food manufacturers. Announced this week, the acquisition adds complementary expertise to Lallemand's existing production, application, and innovation capabilities. Financial terms were not disclosed. The announcement does not specify whether manufacturing sites, personnel, or other assets are included in the transaction, or detail the integration timeline. "We are delighted to welcome this range from IFF into the Lallemand Specialty Cultures portfolio," says Lauriane Fillous, general manager of Lallemand Specialty Cultures. Fillous says the integration complements the company's existing offering and strengthens its ability to support customers with selected microorganisms and technical expertise. Lallemand Specialty Cultures says it will work with customers throughout the transition to maintain continuity of supply, technical support, and service. The business cites 60 years of expertise in meat cultures. Meat bioprotection. In a March 2026 update, Lallemand outlined its Lalcult Protect cultures for meat applications. The company said Protect PA+ uses bacteriocin production to help control Listeria monocytogenes in dry fermented sausages. For fresh meat, Lallemand highlighted Protect CM+, which it said can inhibit L. monocytogenes during storage without affecting color, flavor, or pH. The developments underline its existing focus on microbial safety and sensory quality. Meat reformulation. The acquisition builds on Lallemand's existing work in meat fermentation and bioprotection, including solutions designed to support formulations with reduced or no added nitrates and nitrites. In a 2023 interview with Food Ingredients First, the company outlined Natural Rosé, a combination of yeast ingredients and food cultures developed by its Bio-Ingredients and Specialty Cultures divisions. The concept combines Savor-Lyfe NR 02 and LalCult Carne Rosé - Dry to help maintain sensory quality and food safety when nitrates and nitrites are reduced or removed. The yeast component contributes umami flavor, while cultures help control oxidation. Julia Plateau-Gonthier, Lallemand's dairy, meat, and plant-based category manager at the time, explained that the combination was designed to stabilize meat color. The company also reported testing against Listeria and Salmonella and said protective cultures could be tailored to the production process and finished product. Expanding microbial capabilities. The meat cultures deal follows other moves to broaden Lallemand's fermentation and ingredient capabilities. In August, Foodingredientsfirst reported Lallemand's acquisition of BIO-CAT Enzymes & Microbials, which expanded its enzyme, probiotic, and microbial technologies and strengthened its US manufacturing footprint. The US-based business serves food ingredients, dietary supplements, animal nutrition, agriculture, and industrial biotechnology markets. Last month, Lallemand also established Solyve as a dedicated F&B enzyme business, bringing scientific, manufacturing, and customer support teams into one organization. That move followed its acquisition of the enzyme specialist from France's InVivo group. The latest transaction extends Lallemand Specialty Cultures' meat offering, with the company positioning the expanded portfolio as a platform for further customer collaboration and innovation.
