Requirements
  • At least three years of demonstrated experience as a Kitchen Manager, preferably in a hotel or resort.
  • Proven supervisory and team-building skills, including strong conflict-resolution skills.
  • Strong knowledge of back-of-house operations, including staff supervision, inventory controls, food and labor costs, and product quality.
  • A valid New Mexico Food Handler Manager certification and Alcohol Server Permit are required before hire.
  • Ability to work respectfully and productively with all staff while maintaining professionalism and camaraderie.
  • Ability to work evenings, weekends, weekdays, and holidays.
  • Ability to work in an environment frequently exposed to heat, steam, and noise.
  • Ability to stand for eight or more hours per day and perform physical activities including sitting, reaching, lifting, bending, kneeling, stooping, climbing, pushing, and pulling items weighing up to 50 pounds.
  • Manual dexterity, auditory and visual skills, and the ability to create and follow written and oral instructions and procedures.
  • Stable and progressive work history.
  • Strong work ethic.
Responsibilities
  • Ensure that food and products are consistently prepared and served according to restaurant recipes, portioning, cooking, and serving standards.
  • Order food products according to specifications and ensure deliveries meet required unit counts, conditions, and receiving procedures.
  • Control food cost and usage through proper requisition, storage, rotation, recipe, waste-control, food-holding, and refrigeration procedures.
  • Work with food and beverage managers to plan and price menu items, establish portion sizes, and prepare standard recipe cards for new menu items.
  • Inspect equipment and maintain it in clean and excellent working condition through preventative maintenance programs.
  • Provide department orientation and oversee training of new kitchen employees.
  • Prepare required paperwork, including forms, invoices, reports, and schedules, in an organized and timely manner.
  • Train kitchen personnel in the safe operation of kitchen equipment and utensils.
  • Train kitchen personnel in cleanliness and sanitation practices.
  • Maintain cleaning schedules for kitchen floors, mats, walls, hoods, equipment, and food-storage areas.
  • Provide safety training for carrying objects and handling hazardous materials.
  • Attend scheduled employee meetings and bring suggestions for improvement.
  • Assist the Food and Beverage Manager in supervising the back of the house in a high-volume kitchen, including ongoing training, development, and follow-up.
  • Assist the Food and Beverage Manager with performance discipline for back-of-house staff.
  • Communicate work schedules at least two weeks in advance and manage staff requests for schedule changes.
  • Coordinate efforts between the front and back of the house.
  • Create team spirit throughout the restaurant.
  • Review product costs against existing inventory costs.
  • Maintain food quality and consistency standards and coordinate production.
  • Ensure that a safe, clean, and sanitary kitchen is maintained, including twice-daily reviews and adequate opening and closing procedures.
  • Ensure compliance with federal Occupational Safety and Health Administration and New Mexico Environment Department standards.
  • Ensure proper labeling and dating of all products.
  • Prepare and monitor the daily prep list.
  • Expedite food preparation as necessary.
  • Taste and visually inspect prepared food and take corrective action when irregularities occur.
  • Ensure that food, garnishes, and plate presentations adhere to standards.
  • Perform the duties of other kitchen positions as volume and staffing require.
  • Maintain knowledge of all food products.
  • Apply culinary techniques, including a variety of cooking techniques and knife skills.
